Naughty Leprechauns

Saint Patrick’s Day is always such a fun opportunity for a little mischief. Every year we bake a rainbow cake and then wait to see if those mischievous leprechauns will come give us a pot of gold.

Avid baker that I am, I pick out my favorite box cake mix (whatever is on sale) and a can of white icing. Follow the directions on the box and mix the batter. Divide the batter into 6 small bowls. Add a few drops of food color to each bowl until you have all the colors for a rainbow. You’ll only need red, blue and yellow coloring to make them all. Red and yellow make orange, yellow and blue make green and blue and red make purple.


Once all the colors have been mixed you can pour them into your pan. Sometimes we just drop them in randomly but this year we did stripes.

It’s fun to see what color cake you get when you cut a piece.



After it’s cooled, I ice it and then we give it a sugar rainbow. I make a stencil on a sheet of card stock (just an arched swish). Just make it big enough for one color then move it slight as you add each color. Use colored sprinkles for the pot and the rainbow. I make another stencil that looks like a pot or kettle. Then we wrap it up and go to bed. It never fails that while we sleep, those little green guys sneak in our house and fill our pot with tiny gold coins. (Yum, they’re chocolate!)

Here’s the cake from last year. This year’s cake won’t get it’s gold until after midnight. ;-)



Helpful hint… try not to get food color on your skin. (This is just another reason why I don’t bake much).

Leprechaun Mischief

 
My kids look forward to Saint Patrick’s Day every year.

We have a few traditions that make the day (and the day before) filled with fun.

First we make treats for their classmates.


 I melt white chocolate morsels and stir in a few drops of green food coloring then we dip pretzel sticks in the chocolate and sprinkle a little green sugar on top.



 
Wrap them up and add a sticker and they’re ready to go.


Then we have to make our rainbow cake! I decorate the top with colored sugar to look like a rainbow with a pot at the end. We set that out to see if our Leprechaun will give us some gold coins. (He comes to visit us during the night and wreaks havoc in my house.)
 
Today we found that he peed green in the potty and didn’t flush. (URG!!!)
 He moved the collection of shoes from the front door to the middle of the room. He moved several of my decorations around…things from the kitchen went into the living room and vice-versa.


The worst is, he brings “Lucky Charm” cereal with him. (Mommy doesn’t buy that kind of cereal)

Of course he makes a mess with it and even added a few toys in for the fun of it. (Those are Lego houses and 3 Lego people in a canoe)


We must make him happy because he gave us gold coins (chocolate ones naturally).


The fun is not over yet…

After school the kids will go on a scavenger hunt and end finding these.
 


And for dinner I will make Leprechaun quesadillas. (You’ll have to wait to see those)

I hope my kids learn to add some mischief into their lives and remember how to have fun with everyday things.

Happy Irish...

I’m not Irish but I’ve always loved St. Patrick’s Day. In my younger days it was just a fun “holiday” to drink beer and have Irish coffee all day. I could do without the corned beef or the cabbage but I do love anything potato so that was always a plus. Now I have an Irish husband. Well, He’s 7/8 Irish. We are sure to make a big deal about St. Patrick’s Day around here. Hubby’s grandfather was even born on St. Patrick’s Day so there is all kinds of celebrating going on. AND his name…is Patrick. Go figure. This year the old bird will turn 93.

We do all sorts of things to get in the spirit. Last night we made chocolate covered pretzel rods for the kids to share at school (naturally they are green). Everyone will be decked out in his or her best green attire, the girls will have green fingernails and we’ll be making our rainbow cake today. I’m sure I’ll awake to a messy kitchen Thursday morning. That mischievous Leprechaun comes in through the night and turns things up side down! Last year he spilled “Lucky Charm” cereal all over the place.

I decorate as much for Saint Patrick’s Day as I do for any other holiday. Most of the house is coated is something green.

Here’s a new decoration I added to the collection this year.
I stated with a plate, chalkboard contact paper, a pattern of a clover and some leftover (post-Christmas discount) ribbon.

The image I found for the clover was fuzzy after being enlarged, so I had to trace around the edge to get a better image.



Then I cut it out and traced it onto the contact paper. Once I had the contact paper cut out I positioned the chalkboard clover on the plate. I used some hot glue to attach a piece of ribbon to the back of the plate and…



The kids love being able to change the message.

Poached Pears and Good Friends

What a weekend. It was go go go all weekend long around here. Friday night was the local October fest full of food, vendors, rides, music and BEER. Then Saturday stated early with my favorite, the Covered Bridge Festival.

After riding the rainbow train several times, walking back n forth checking out all the crafts and indulging on some fried pickles and a funnel cake we headed back home.

There was just enough time to mow the grass, hide the dust bunnies and put dinner together. One of my favorite things to do is spend time with other families. You get in some much-needed adult time, enjoy good food and listen to laughter fill the room. The kids run around like a bunch of wild banshees and giggle the whole night.

Aside from trying to recreate the whole evening in general I will be making the pears for dessert again. This was a new recipe and it was a hit!

6-8 pears
1 cup white wine
½ cup sugar
½ cup water
3 T. lemon juice
2 cinnamon sticks
3-4 whole dried cloves
¼ tsp. Ground nutmeg
8- 10 T. caramel sauce/dip

Peel pears, leaving whole with stem intact
Place upright in slow cooker
Combine wine, sugar, water, lemon juice, cinnamon, cloves and nutmeg.
Pour over pears.
Cook on low for 4 to 6 hours.
Cool pears in liquid.
Transfer to serving dish and place 2 tsp of liquid in dish.
Drizzle warmed caramel sauce over pears and serve.


Share them with friends and they taste even better!!!
