Busy Day Fruit Cobbler, a dinner idea

Cooking almost every meal we eat, is my usual kitchen style. Often requiring a bit of creative license to use what we have on hand, in the pantry. When eating dinner, my husband will turn to me and say, "are you going to blog this?” That is how a dinner idea came to be...not always a recipe, but too good, not to share.

Today we have, Busy Day Fruit Cobbler. 

 

Sometimes those old vintage recipes, simply call out to be made! 

There is a reason that all of them have remained in use, decade after decade. They are easy to make, don't call for specialized products and pretty much always taste pretty darn good. I have had one of them in my recipe file to try, for awhile now. So I decided that after all this time, I should make it. But before I did, I googled Lazy Man's Peach Pie, and found out that it has in fact, been on many different blogs. Confirming my opinion that these recipes never really do out of style or enjoyment. 


And for good reason. 

They are usually easy to make, especially on the busy days. And don't we all need an easy, delicious, treat to share with the family at dinner? Something that lets everyone know, how much you appreciate all the help? Come on, grab a can of juice packed fruit and make this cobbler! Oh and by the way, the name is a bit misleading, this was never a pie. This is a fruit cobbler, but don't let the old name stop you...because it is too good to miss out on. 

This is another From the Hip recipe using basic ingredients and as few dishes as possible...come and take a peek.
 

Additional thoughts on this recipe:

For those with a little berry patch in the back yard, a couple hands full of raspberries or blueberries would make a delicious addition. 

And yes, you can certainly drain a second can of peaches and add them to the cobbler. Additional peaches would be a wonderful way to have more serving when everyone made it home for dinner!


Ingredients needed for this recipe:
  • organic juice pack fruit or canned fruit of choice
  • milk
  • sugar
  • Whole Wheat Self-Rising flour
  • butter
  • cinnamon
  • nutmeg
You will also need the following:
  • 4 c glass measuring cup
  • small sieve or strainer
  • 1 c measure
  • 9 in square pan
  • silicone spatula 
Now we are ready to begin!




Busy Day Fruit Cobbler
From the Hip, a dinner idea
350-degree oven

1 16 oz. can of juice pack organic peaches - you could use any fruit desired
milk if needed
1/4 c (half stick) butter
1 c Whole Wheat Self-Rising Flour, you can find our recipe here
1 c sugar
cinnamon
nutmeg



Melt the butter, I used a skillet, but you could use the large mixing cup (in the microwave) before draining the peaches, or in the baking pan while preheating the oven. 

Pour the melted butter into a 9inch pan



Drain the peaches into a large mixing cup, capture all the juice.



Add enough milk to bring the measure up to 3/4 cup, if needed

Add the Whole Wheat Self-Rising Flour to the large mixing cup. 



Using the same measuring cup, measure out 1 cup of sugar, pour 3/4 of the sugar into the large mixing cup. 

Add a dash of cinnamon and a few gratings of nutmeg to the remaining sugar in the measuring cup. 

Mix the cake ingredients until smooth, pour into the pan with the butter. 



Layer the peaches over the batter. 

Sprinkle with the sugar and spice mixture. 

Bake for 30 to 35 minutes or until done in your oven. And yes, serve with a bit of whipped cream.

  3. I love this, especially as it is easy to make. Peaches are something we don't often eat which is crazy as we all love them! I think I might need to try this recipe.

    1. Kim, I will make this often, I can't eat chocolate so it is usually a fruit dessert for me, chocolate is made into hubby desserts around here!
