EASY Bacon Cheeseburger Meatballs

These tender meatballs are packed with smokey bacon and cheese, making them taste like a cheeseburger without the bun. So easy they are perfect for a quick weeknight dinner! 


Meatballs are always a hit at our house. I usually make them with sauce and spaghetti, but this recipe totally caught my eye a few years back, so I decided to give it a try. My kids LOVE cheeseburgers, so I knew they would totally be into these meatballs. 

These meatballs are super good! I love the sweet onion flavour, paired with the smokey bacon and beef. The ketchup and Dijon mustard bring it all together, to make them taste like an actual cheeseburger. They are nice and tender and the cheese just gets all bubbly and crisp on the outside. I served mine with mashed potatoes with gravy, and broccoli. I also garnished them with pickles and tomatoes, because that's how we like to dress our burgers. The kids said they were delicious and they really didn't miss the bun at all!


Bacon Cheeseburger Meatballs

1 small onion, chopped
6 slices bacon, chopped
1 lb lean ground beef
¼ cup almond meal (almond flour)
2/3 C cheddar cheese, shredded
2 Tbs ketchup
2 tsp Dijon mustard
1 egg
Salt & pepper

In a large non stick skillet, cook the onion and bacon over medium heat, until bacon is crispy and onions begin to caramelise; about 10-15 minutes. Using a slotted spoon, remove bacon mixture from skillet, to a paper towel lined plate. Let cool.

Preheat oven to 450 degrees F.

In a large bowl, combine the ground beef, almond flour, cheese, egg, ketchup, mustard, salt, pepper and cooled bacon mixture. Form ground beef mixture into 15 equal sized meatballs (a bit larger than a golf ball) and place in a 9x13 inch baking dish. 

Bake in preheated oven for 18-20 minutes; until cooked through. Allow the meatballs to set 5 minutes before serving.

  1. I love this idea! Have you ever tried putting a cubed piece of cheese in the center of the meatballs so the cheese is melty when you bite into the meatball?
